- Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line it with parchment paper.
- Grate the zucchini and lightly squeeze out excess moisture using paper towels or a clean kitchen towel.
- In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
- In a large bowl, mash the bananas until mostly smooth. Whisk in the eggs, brown sugar, granulated sugar, oil, and vanilla until well combined.
- Stir the grated zucchini into the wet mixture.
- Add the dry ingredients to the wet ingredients and stir just until combined. Fold in the walnuts or chocolate chips if using.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50 to 55 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Cool the loaf in the pan for 15 minutes, then transfer it to a wire rack to cool completely before slicing.
Notes
Use very ripe bananas for the best flavor. Lightly squeeze the zucchini so the loaf stays fluffy, not wet. Do not overmix the batter. Optional walnuts or chocolate chips add great texture.
