Soup
  • 1 tablespoon olive oil
  • 1 pound lean ground beef
  • 1 small yellow onion diced
  • 3 cloves garlic minced
  • 1 tablespoon tomato paste
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes optional
  • 1 teaspoon kosher salt plus more to taste
  • 1/2 teaspoon black pepper
  • 28 ounces crushed tomatoes 1 can
  • 4 cups low-sodium chicken broth
  • 8 lasagna noodles broken into large bite-size pieces
  • 1 cup heavy cream
  • 2 cups fresh spinach roughly chopped
Cheese Topping
  • 3/4 cup ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese
  • 1/3 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley or basil chopped, for garnish

Method
 

Make the soup
  1. Heat the olive oil in a large Dutch oven or soup pot over medium heat. Add the ground beef and cook, breaking it up with a spoon, until browned and cooked through, about 5 to 7 minutes. Drain excess grease if needed.
  2. Add the diced onion and cook for 3 to 4 minutes, until softened. Stir in the garlic and cook for 30 seconds, just until fragrant.
  3. Stir in the tomato paste, Italian seasoning, dried basil, red pepper flakes if using, salt, and black pepper. Cook for 1 minute, stirring, until the tomato paste darkens slightly.
  4. Pour in the crushed tomatoes and chicken broth. Stir well, scraping up any browned bits from the bottom of the pot, and bring to a gentle boil.
  5. Add the broken lasagna noodles and reduce the heat to a steady simmer. Cook for 10 to 12 minutes, stirring occasionally, until the noodles are tender.
  6. Lower the heat and stir in the heavy cream and chopped spinach. Cook for 2 to 3 minutes, until the spinach wilts and the broth is creamy.
Finish and serve
  1. In a small bowl, mix the ricotta, mozzarella, and Parmesan.
  2. Ladle the hot soup into bowls. Top each serving with the cheese mixture and garnish with chopped parsley or basil. Serve immediately.

Notes

For the best leftover texture, cook and store the noodles separately if possible. Add extra broth when reheating, as the pasta will absorb liquid over time. Stir in the cream over low heat for the smoothest finish.
