- Preheat the oven to 400°F. Lightly grease a 2 to 2 1/2 quart baking dish.
- Place the chicken in a large bowl. Add 1 tablespoon olive oil, salt, black pepper, Italian seasoning, paprika, and red pepper flakes if using. Toss to coat evenly.
- Add the zucchini, onion, garlic, and remaining 1 tablespoon olive oil to the bowl. Toss until the vegetables are lightly coated and combined with the chicken.
- Spread the zucchini and onion mixture into the prepared baking dish. Arrange the chicken evenly over the top.
- Cover loosely with foil and bake for 20 minutes.
- Remove the foil. Stir gently if needed, then sprinkle the mozzarella and Parmesan evenly over the top.
- Bake uncovered for 15 minutes more, or until the chicken is cooked through to 165°F and the cheese is melted and lightly golden.
- Broil for 1 to 2 minutes if desired for extra browning, watching closely.
- Let rest for 5 minutes, then garnish with parsley and serve.
Notes
Cut zucchini into slightly thick half-moons so they hold their shape. Chicken thighs stay especially juicy, but breasts work too. If the dish releases a lot of liquid, spoon off a little before adding the cheese. Always cook chicken to 165°F.
