Prepare the chicken
- Pat the chicken breasts dry. If needed, pound them to an even thickness for more even cooking.
- Season both sides of the chicken with salt, black pepper, and garlic powder, then lightly dust with the flour.
- Heat the olive oil in a large skillet over medium heat. Add the chicken and cook for 5 to 6 minutes on the first side until golden brown.
- Flip and cook 4 to 5 minutes more, until browned on the second side. Transfer the chicken to a plate.
Make the sauce
- Reduce the heat to medium-low and melt the butter in the same skillet.
- Add the minced garlic and cook for about 30 seconds, just until fragrant.
- Pour in the chicken broth and scrape up any browned bits from the pan. Simmer for 1 to 2 minutes.
- Stir in the heavy cream, Parmesan cheese, chopped sun-dried tomatoes, Italian seasoning, and crushed red pepper flakes if using.
- Simmer gently for 3 to 4 minutes, stirring often, until the sauce begins to thicken.
Finish the dish
- Return the chicken and any juices to the skillet and spoon the sauce over the top.
- Simmer gently for 5 to 7 minutes, or until the chicken is cooked through and reaches 165°F in the thickest part.
- Taste and adjust seasoning if needed, then garnish with chopped parsley or basil before serving.
Notes
Use freshly grated Parmesan for the smoothest sauce. If the sauce thickens too much, loosen it with a splash of chicken broth. Chicken thighs can be substituted for chicken breasts if preferred.
