- Preheat the oven to 400°F and lightly grease a 9x13-inch baking dish.
- Heat the olive oil in a large skillet over medium heat. Add the ground beef and diced onion and cook for 7 to 8 minutes, breaking up the beef, until browned and the onion is softened.
- Stir in the garlic, kosher salt, black pepper, Worcestershire sauce, ketchup, and yellow mustard. Cook for 1 minute.
- Reduce the heat to low. Stir in the condensed cream of cheddar soup, sour cream, and 1 cup of shredded cheddar cheese until the mixture is creamy and evenly combined.
- Spread the beef mixture evenly into the prepared baking dish.
- Arrange the frozen tater tots in an even layer over the beef mixture.
- Bake uncovered for 25 minutes, until the tater tots are hot and starting to turn golden.
- Remove the dish from the oven and sprinkle the remaining 1 cup of cheddar cheese over the top.
- Return the casserole to the oven and bake for 10 to 15 minutes more, until the cheese is melted and bubbly and the tater tots are deeply golden and crisp.
- Let the casserole rest for 5 minutes. Garnish with sliced green onions and serve warm.
Notes
Drain excess grease from the beef if needed before adding the creamy ingredients. Arrange the tater tots in a single layer for the crispiest topping. Add a few extra minutes of baking time if assembling from a chilled filling.
